With the weather cooling down and the leaves starting to change colors. Warmer foods start to sound more appealing.
This breakfast baked zucchini oats is amazing. It give you the feeling of an oatmeal cookie but packed full of protein and vegetables with carbohydrates to give us energy.
What will you need?
2 zucchini’s
1/2 cup egg white
1 ripe banana
1 1/2 Cup rolled oats
1/4 cup semi sweet dark chocolate chips
1 scoop of chocolate vegan shakeology (or if you doing have this 1 scoop of your chocolate protein or 1 tbs of coco powder
Instructions
Preheat oven to 350
Shredded zucchini using a cheese grater make sure to squeeze out any excess water once you have shredded zucchini I use a paper towel.
Take your ripe banana and squish it into a bowl adding everything in and giving it a good mix. You want the consistency or brownie batter. If needed add more egg whites if too hard. Or rolled oats if too runny.
Sprinkle a few more chocolate chips on top.
Place into a baking Pyrex 9x12 and cook at 350f for 45 minutes or until cooked all the way though.
Makes 8 servings.
I like to bulk meal prep this out.
When I go to eat it. I pop it in the microwave for 1 minute top it with a 1/2 cup of Greek yogurt and pumpkin spice and enjoy.
