When you think pizza do you think carb overload heavy feeling in the gut exhausted after you eat it? I do and that’s completely normal my body does not like a lot of dairy and my body does not agree well with gluten. but for some reason I can never say no to a pizza hahah it’s a problem.

So I’ve decided to start coming up with tasty options that agree with my body but I’m still being satisfied by all the things that I love. This tasty thin crust pesto chicken pizza was a delicious lunch.

Here’s what you’re going to need to make it

Cauliflower tortilla you can pretty much find these anywhere but make sure you check the ingredients.

Pesto

Arugula

Red onion

My balsamic chicken recipe is on another post make sure to check it out.

Parmesan shavings

All you have to do is toast your cauliflower tortilla in a sauce pan with a little bit of olive oil once it’s fully cooked use 1 tablespoon of pesto spread onto tortilla take a handful of arugula place on top followed with red onion chicken with the shavings of Parmesan cheese.

This makes one serving and goes great with a glass of wine and water.

Give it a try and let me know what you think xoxo.
