OK, so I’m sure you’ve heard of taco potato, but let’s put and Erika on the meal! Nothing against potatoes, but I personally just like the sweetness of a sweet potato because it really put this whole meal into a whole new ballgame.

For the chicken for this meal, you’re gonna go back to my homepage and you’re going to use the shredded chicken recipe in a crockpot.
Grab your sweet potatoes and preheat your oven to 400. Now for however, many meals you want to make it’s going to be half of a sweet potato. This is a great and easy meal to bulk.
You’re going to take your sweet potatoes and give them a good poke with a fork placed them on a cookie sheet spray down with a little bit of olive oil, and put them in the oven let them cook until you can stab them all the way through with a knife should take about 45 minutes.
Well, your sweet potatoes are cooking. You’re going to slice up some bell peppers (or purple cabbage) and sauté them in a pan over medium heat with a little bit of olive oil nothing more. I recommend half of a bell pepper per meal.( 1/2 cup of purple cabbage)
on the side, dice up some Romain lettuce, and some green onions for garnish avocado is optional.
Once everything is completely cooked, you’re going to place your half a sweet potato in your dish. Give it a good slice and open it face up. You’re going to place in your sautéed bell peppers 1/2 a cup of shredded chicken on top. And garnish as desired.

Meal prepping tip ( when you place everything into a container I recommend keeping your garnishes in a Ziploc baggie on top so you can heat everything up and then place your garnishes on top once everything is cooked)
