Let's put a fun spin on nachos with my favorite complex carbohydrate SWEET POTATOS!!
This dish is fun to make and won't leave you feeling heavy and over salted.
Let's get cooking
Ingredients
2 large sweet potatoes
Ground turkey or shredded chicken ( check blog for shredded chicken recipe)
Mexican blend cheese
Cilantro
Limes
Radish
Jalapeño
Black beans
Avocado
Salsa
Olive oil
Chill powder
Cumin
Salt
Pepper
Instructions
Preheat oven to 400
Slice sweet potato's thin, place on cookie sheet drizzle olive oil and sprinkle in seasoning (season with your heart)
Mix around, place in oven for 35-40 minutes.
Cook up your protein while your sweet potatoes are cooking and prep other ingredients.
Once sweet potatoes are cooked style them as you would enjoy your nachos.
Sprinkle cheese on at the end and pop back in the oven till cheese is completely melted.
Serve and enjoy
Ps -Left overs make a great breakfast with an egg on top 😉
