Sweet potato Hash

This meal is absolutely one of my families favorites. It’s Easy to make and it makes a great left over.


It’s packed full of great energy and protein. You will tell full but not heavy with the Energy to take on the day.


Ingredients

3 large sweet potatoes

1 jalapeño

1/2 can Black beans

6 eggs

2 green onions

Salt, pepper, garlic


Instructions

1- preheat oven to 400.

2- wash and chop up sweet potatoes into small cubes. I left the skins on because I love all the vitamins and nutrients that you get from Sweet potatoes.

3-place chopped sweet potatoes in a bowl lightly drizzle with olive oil and mix around. Then dump into pan.

4- They said jalapeño and place on top of sweet potatoes

5-Sprinkle black beans

6-Top with your seasoning


Bake at 400 for 30-35 minutes until your sweet potatoes can be stabbed with a fork.


Take out makes six wells to place your eggs and to pop back into the oven until the eggs are cooked to your liking.


Top with green onion.


* If you’d like to put salsa on top when served it’s a great add on😋
