One pot turkey vegetable mix

This one pot turkey vegetable mixture is amazing. Now I put it on top of a half of a spaghetti squash, but you can pair it with whatever makes you happy chopped up zucchini, zucchini, noodles, regular noodles, squash, or simply buy itself.

And guess what? It makes great leftovers for breakfast. The next morning with an egg on top I know sounds crazy but hear me out. It’s amazing.


So let’s get cooking

You’ll need two zucchinis

Two Summer squashes

One jalapeño

Half a white onion

1 1/2 pounds of ground turkey

And a jar of your favorite marinara

You’re going to chop up all your vegetables while your ground turkey is cooking alone by itself in a large pan.


Once your ground turkey is just about cooked toss and all your chopped vegetables you may top it with a little bit of garlic powder and salt and pepper if you would like. Let those cook down pour in your marinara sauce depending on how thick it is you may wanna add a little bit of water and let that simmer and cook for a good 10 minutes together.

You may garnish with basil.


If you’d like to cook a spaghetti squash, what I do, I cut it in half long ways scoop out the seeds with an ice cream scooper because it makes it so much easier. And pop them face down on a cookie sheet. I cook them at 350F for about 45 minutes so I would do this first before you start cooking anything else so by the time everything is ready, it’s ready together.

Once your spaghetti squash is done, take it out of the oven flip it right side up take a fork and give your spaghetti squash, a little fluff spoon in your serving of the mixture. You may top it with some Parmesan or mozzarella and extra basil and pop it back in the oven for a quick boil.
