I made this salad for a family party and everyone loved it!
It was cold and refreshing, but also gave you that tasty crunch.
Paired it with BBQ chicken ( using the primal kitchen BBQ sauce)
and it was the perfect combo together. But honestly any protein would go great with this salad. Like a pineapple glaze salmon.🤤🍍
I made a large salad that had 12 servings
5 cups of chopped ENGLISH cucumber
4 cups of chopped cherry tomatoes
3 cups of red onion
1 can of garbanzo beans
FRESH dill and basil 2 tbs each
Pink Himalayan salt and pepper to your liking.
If you want to top with feta that would give great flavor as well.
The salad is light and refreshing and full of fiber, low in calories, due to the water based vegetables& fruits used. It’s great for that side dish for weight loss or just wanting to not feel heavy after eating.
