Loaded Turkey Acorn Squash

Looking for a sweet and savory meal the whole family will love, here you go.

This meal took me 15 minutes to prep and an 1 hour of cook time.

Makes 4 servings


This is a great fall and winter meal thats gives you the feeling of a fullness of your favorite comfort food But not the heavy feeling the next morning. Your body will wake up feeling energized and light.


Ingredients

2 acorns squashs

1 pound ground turkey

1 cup dices purple cabbage

1 diced red bell pepper

3 diced Green onions

1 diced Jalapeño

1/2 cup jack cheese

2 tbs raw sugar

olive oil

salt

ground black pepper

Oregano

Cumin


Instructions

1-Pre healthy oven at 450 F

2- Cut acorn squash in half and clean out seeds ( I use an ice cream scooper here )

3- put squat face down on a cookie sheet cook for 45-50 min you would be able to pock a tooth pick though the skin or the squash though the meat of the squash to see if its ready.

4- While acorn squash are cooking cook Turkey in a sauce pan till cooked.

5- in a separate bowl combine all vegetables , olive oil and spices together make sure to coat nicely. Use spices to your taste liking. NOT THE SUGAR !!!!

6- Combine vegetables in with cooked Turkey. mix on medium heat till veggies are cooked.

7- Take our Acorn squash

flip over, sprinkle raw sugar in the bottom of the squash, sprinkle jack Cheese in the hole over the sugar. Then take your Turkey and Vegetable mix and load about 1/2 cup to 1 cup of Turkey mix into squash. ( you may sprinkle more Cheese on top)

8- place back into the oven cook at 475 for 5-8 minutes, serve and Enjoy
