Lemon pesto chicken

I know your mouth is already watering from the title!

This is a quick easy way to cook chicken with a bomb flavor in your mouth. With three simple ingredients

Not only is this great the night out, but it is also great the next day chopped up on a salad or paired with cauliflower rice or your favorite vegetable.

I paired my Lemon chicken pesto with a decadent squash and a arugula salad.


Ingredients

Meyers lemons I did two slices per breast.

Pesto, I love the Kirkland‘s pesto.

Chicken breast - when it comes to a chicken breast I love just fillet and half so I can separate the portions.

Not only does this help to allow the chicken to absorb more flavor but it does cook faster.


Instructions

Fillet chicken breast place on cooking sheet, 1 tablespoon of pesto per fillet. Place slices of lemon on top.

Cook at 400 for 45 minutes.
