Chicken Greek salad

As summer approaches I love having a loaded salad that satisfies all of my cravings. Not only is the salad easy to make and simple to meal prep in bulk😉

But it’s packed full of so many great vitamins and minerals and proteins for your body


☀️Ingredients

garbanzo beans

avocado

English cucumber

chicken breast

Red onion

Sweet potato

Feya

dill

lemon

arugula


Instructions

I marinated for chicken breast in a balsamic salad dressing for four hours and then I barbecue them on the grill. 375 at 25 minutes aside

while the chicken is cooking

Peel your sweet potatoes, Dice them up into small cubes, Place into a bowl drizzle with olive oil massage them lightly salt and pepper and chili powder. I cooked my sweet potatoes in the air fryer for faster time. But you could also roast them in the oven at 400 for 35 minutes

Now while We have the chicken and the sweet potatoes cooking. You’re going to get your plate ready we’re gonna start with a bed ever glad I did a half a cup you’re going to place your diced English cucumber and your red onion together both items together equal to half a cup Take your garbanzo beans strain them And wash them place 2/3 of a cup on top of the arugula. Once you’re so potatoes are ready place 2/3 of a cup on the arugula.

once your chicken is fully cooked, cut your chicken up place on top of arugula.

Slice 1/4 of an avocado place on top sprinkle with feta and dill and enjoy.

This is a great salad and is a hit with everyone
