Lunch time does not have to be boring or take forever to cook.
Here is a great go to meal of mine that is perfect for these summer months, also a great and easy meal to make while camping.
What you need
3 butter lettuce leaves
6 oz of chicken ( you can use rotisserie chicken)
1/2 avocado
Hummus
Sriracha mayo
feta
everything bagel seasoning
Now I know what you r thinking OMG Erika this has a lot of fats in it! WHO cares is healthy tastes and guess what your body needs healthy fats to run and absorb vitamins....oh and you brain is made up of fat so its okay to have this meal.
Once you have this all on your counter assemble as desired
