Air fryer, roasted butternut squash

This is a quick and simple dish that can be in so many different ways.

I had this as a snack by itself but it would be perfect for a side dish or for breakfast with a runny egg on top… or spice, it up with some other sautéed vegetables and your favorite protein


Ingredient

Cubed, butternut squash now you could do it the easy way and grab the pre-cubed at Costco like I do. Or you can peel and cube your own butter nut squash.

Olive oil oil

Salt and pepper

Thyme

Put everything in a bowl give it a nice toss

Popped into the air fryer at 390° and cook for 15 to 17 minutes. The more butternut squash you have the longer it’s gonna take.

If you don’t have an air fryer, you can do the exact same thing in your oven


I topped it with some roasted cherry tomatoes, as well as arugula sprouts. It was the perfect combination of salty and sweet.
