Acorn Squash dish

A perfect Fall dish for the family or a special date night for you and your special person.


Ingredients

  • cookie sheet

  • 2 lbs. delicata squash cut in half lengthwise, seeds removed, sliced into ½-inch wedges

  • 1 Tbsp. + 1 tsp. olive oil

  • 1Tbsp. finely chopped fresh garlic

  • ¼ tsp. sea salt (or Himalayan salt)

  • ¼ tsp. ground black pepper

  • 1 green onions chopped

  • 2 shallots chopped

Instructions


  1. Preheat oven to 425°F.

  2. Line large baking sheet with parchment paper or foil. Set aside.

  3. Combine squash, oil, garlic, salt, and pepper in a large bowl or bag ; toss gently to blend.

  4. Place squash evenly on prepared baking sheet. Bake for 23 to 28 minutes, turning once, until tender.

  5. Serve immediately.

I served this dish with 4 oz of beef tenders and a glade of red wine with a small side salad.
